Yield. A 80% yield means 1 kg gives 800 g usable, so plating 200 g needs 250 g bought. The costing uses the yield-adjusted cost, not the purchase price — which is why dishes cost more than a naive spreadsheet says.
Food cost % & Target price. What a dish costs as a share of its price, and the price that would hit the target you set. Gross profit is shown on PRICE and markup on COST, labelled, because they are different numbers.
Par levels & Order list. Par from average daily usage, lead time and safety stock; the order is what it takes to get back to par, grouped so you can ring one supplier at a time.
